This recipe for Rosemary Roasted Mixed Nuts is perfect for healthy snacking and gifting! Keep these around the house so you have something healthy and filling to reach for between meals!
I make large batches of Rosemary Roasted Mixed Nuts and give it out to friends and family in glass jars around the holidays.
This is also a great gift for your vegan or gluten free friends. If you are giving this to your vegan friends, you will just need to make sure the sugar you use is vegan (some granulated sugars are not vegan friendly).
I started making my own mixes when I realized I was buying canned roasted mixed nuts and picking out all of the pecans (roasted pecans are the BEST). It is so easy to roast and flavor your own mix of nuts at home and add whatever nuts you prefer!
You can customize this recipe with your preferred mix of nuts. I like my mix to be mostly pecans, so of course I add a lot. I will buy bulk nuts at Costco as I find them to be more cost effective.

Rosemary adds a deeply savory flavor to this mix. A small amount of sugar gives the nuts a slight sweetness, which nicely balances out the rosemary. I promise you will come back to this recipe time and time again.

Rosemary Roasted Mixed Nuts
Equipment
- Oven
- Sheet Pan
- Medium Bowl
Ingredients
- 1 1/2 tbsps olive oil
- 1 tsp sugar
- 2 heaping tbsps chopped, fresh rosemary
- 1 tsp sea salt
- 2 1/2 cups raw, unsalted mixed nuts You can use whatever nuts you prefer and have have on hand. I used a mixture of pecans, almonds, and cashews.
Instructions
- Preheat Oven to 350 degrees F
- In a medium bowl, combine oil, sugar, rosemary, and sea salt.
- Add the mixed nuts to the bowl. Stir until the nuts are well coated with the oil mixture.
- Pour onto an oiled baking sheet. Make sure the nuts are in an even layer and not touch.
- Bake on the center rack of your oven for 10-15 minutes.
- Keep a close eye on the oven. Remove from the oven when fragrant and slightly brown.
- Let cool and serve.
