Freshen up your salads with herbs! I eat my Simple Herb Salad almost every single day (seriously). This fresh salad has very few ingredients and takes only minutes to make. The salad dressing is my absolutely delicious Lemon Honey Vinaigrette, which is just as simple to make. The key to this salad is the simple dressing and adding A LOT of herbs, the more the better. This is a great way to use up any herbs you have leftover in your fridge and perfect if you grow herbs in your garden.
MAIN INGREDIENT LIST FOR SIMPLE HERB SALAD
- Spring Mix
- Dill
- Parsley
- Mint
- Lemon Honey Vinaigrette
FRESH HERBS
Fresh herbs are the key to this salad. Adding herbs to any salad will elevate the flavor. My favorite combination of herbs for this salad are parsley, mint and dill. I leave them mostly whole, just slightly tearing them apart. Any herbs you like will work, I also sometimes add basil if I have it on hand. I really use this as a delicious way to use any leftover herbs I have in my fridge.
THE DRESSING
The simple yet delicious vinaigrette brings this salad over the top. My Lemon Honey Vinaigrette is made from Fresh Lemon Juice, Honey, Extra Virgin Olive Oil (EVOO as Rachel Ray would say), salt, and pepper. Recipe can be found here: Lemon Honey Vinaigrette.

Simple Herb Salad
Ingredients
- 10 oz spring mix
- 1/2 cup mint leaves
- 1/2 cup dill
- 1/2 cup parsley leaves
- Lemon Honey Vinaigrette (click link for recipe)
Instructions
- Make one batch of my Lemon Honey Vinaigrette.
- In a large salad serving bowl, add the spring mix and roughly tear the mint, dill and parsley leaves onto, leaving them mostly whole.
- Dress with some of the vinaigrette to taste. I use about half of the recipe for this salad. Toss to combine and serve.
