Healthy Chocolate Truffle Energy Balls

Chocolate Truffle Energy balls are super easy to make and perfect for a quick snack on the go or even dessert!  Dates are mixed in a food processor with almonds, oats, cacao powder, and espresso powder and then rolled in coconut and freeze dried raspberries.  These delicious snacks are no bake, gluten free, refined sugar free, and vegan.

Chocolate Energy Balls with dates are so rich and decadent, they can be eaten as a dessert. Valentine’s Day is almost here and these chocolatey bites are perfect if you are looking for a healthy, yet decadent dessert.

This recipe is also great if you like to meal prep. I will make a batch of these at the beginning of the week and grab a couple as a snack or dessert when I am craving something sweet.

Main Ingredient List for Chocolate Truffle Energy Balls

  • Dates
  • Cacao Powder
  • Almonds
  • Oats (Gluten free if desired.)
  • Espresso powder (This helps enhance the chocolatey flavor.)

How To

First, I soak the dates in hot water for 10 minutes and then strain. Soaking will soften the dates and allow them to blend into a thick paste paste.

Then, I blend all of the ingredients in a food processor, until a cohesive mixture forms. The mixture is done when it resembles a thick brownie batter, as pictured above when done. There should still be small pieces of almonds and oats visible.

Next, I roll the mixture into tablespoon size balls. I use a small cookie scoop for this step.

To finish the energy balls, I roll them them in freeze dried raspberries and coconut. I blend the coconut and raspberries to a fine powder using a small food processor before rolling the energy balls.

Ingredients
  

  • 2 cups pitted dates
  • ⅓ cup whole, raw almonds
  • ⅓ cup oats Gluten free if desired.
  • ¼ cup cacao powder
  • ½ tsp espresso powder
  • Optional toppings for rolling: coconut*, freeze dried raspberries or strawberries*, cacao powder

Instructions
 

  • Soak dates in hot water for 10-15 minutes and drain. You can skip this step if your dates are fresh and moist.
  • In a food processor, add almonds. Pulse until roughly chopped, about 5-10 seconds.
  • Add dates and pulse until the dates start to form a paste, about 10 seconds.
  • Add oats, cacao powder and espresso powder. Pulse until the mixture is fully incorporated and is a thick paste. The almonds and oats should be in small pieces.
  • Roll into tablespoon sized balls and then into your desired toppings.
  • If you are using coconut or freeze dried fruit, I will grind these in a small food processor into almost a powder before coating the energy balls.

Notes

*I used coconut and freeze dried raspberries. Using a small food processor, I processed the coconut and raspberries to a finer consistency before rolling the energy balls.
