Healthy Chocolate Truffle Energy Balls

Chocolate Truffle Energy balls are super easy to make and perfect for a quick snack or dessert!  Dates are mixed with almonds, oats, cacao powder, and espresso powder.  These delicious snacks are no bake, gluten free, refined sugar free, and vegan.

Ingredients
  

  • 2 cups pitted dates
  • cup whole, raw almonds
  • cup oats Gluten free if desired.
  • ¼ cup cacao powder
  • ½ tsp espresso powder
  • Optional toppings for rolling: coconut*, freeze dried raspberries or strawberries*, cacao powder

Instructions
 

  • Soak dates in hot water for 10-15 minutes and drain. You can skip this step if your dates are fresh and moist.
  • In a food processor, add almonds. Pulse until roughly chopped, about 5-10 seconds.
  • Add dates and pulse until the dates start to form a paste, about 10 seconds.
  • Add oats, cacao powder and espresso powder. Pulse until the mixture is fully incorporated and is a thick paste. The almonds and oats should be in small pieces.
  • Roll into tablespoon sized balls and then into your desired toppings.
  • If you are using coconut or freeze dried fruit, I will grind these in a small food processor into almost a powder before coating the energy balls.

Notes

*I used coconut and freeze dried raspberries. Using a small food processor, I processed the coconut and raspberries to a finer consistency before rolling the energy balls.
