Zucchini Corn and Goat Cheese is a refreshingly healthy and delicious side dish. This recipe comes together very quickly and is perfect to serve alongside dinner or at a barbeque.

To make this recipe, you will need:
- Zucchini
- Fresh Corn Kernels (Frozen can be substituted.)
- Dried Thyme
- Fresh Basil
- Goat Cheese
How to Make Zucchini Corn & Goat Cheese
To start, I prepare the zucchini and corn before I start cooking. Dice the zucchini into 1/2 inch pieces, see below, and cut corn kernels from two ears of corn. To cut fresh corn, stand up the corn on a large cutting board or bowl. Using a short knife, carefully cut the kernels from the top to the bottom.
Once the zucchini and corn are prepped, heat a large skillet over medium heat with oil.
First, cook the zucchini with salt and pepper in the skillet for about 5 minutes. Then, add the corn and dried thyme and cook for an additional 5 minutes, stirring occasionally. The corn and zucchini will be done when browned and slightly softened.
Once the zucchini and corn are cooked, turn off the head and add gently stir in the crumbled goat cheese and fresh basil. Finally, taste for seasoning, add salt and pepper if needed, and serve!

Ingredients
- 1 tbsp olive oil
- 2 medium zucchini Diced.
- 2 cups fresh corn kernels Frozen can be substituted as well.
- 1/2 tsp dried thyme
- 1/4 cup basil
- 1/3 cup crumbled goat cheese
- salt and pepper to taste
Instructions
- Heat oil in a large skillet over medium heat.
- Add diced zucchini. Lightly season with salt and pepper.
- Cook zucchini for 5 minutes, stirring occasionally.
- Add corn kernels and dried thyme. Cook for an additional 5 minutes. The corn and zucchini will be done when browned softened.
- Turn off the heat. Stir in basil and goat cheese.
- Taste and season with additional salt and pepper if desired.
