Zucchini Corn & Goat Cheese Side Dish

Zucchini Corn & Goat Cheese is a refreshingly healthy and delicious side dish. This recipe comes together very quickly and is perfect to serve along side dinner.

Ingredients
  

  • 1 tbsp olive oil
  • 2 medium zucchini Diced.
  • 2 cups fresh corn kernels Frozen can be substituted as well.
  • 1/2 tsp dried thyme
  • 1/4 cup basil
  • 1/3 cup crumbled goat cheese
  • salt and pepper to taste

Instructions
 

  • Heat oil in a large skillet over medium heat.
  • Add diced zucchini. Lightly season with salt and pepper.
  • Cook zucchini for 5 minutes, stirring occasionally.
  • Add corn kernels and dried thyme. Cook for an additional 5 minutes. The corn and zucchini will be done when browned softened.
  • Turn off the heat. Stir in basil and goat cheese.
  • Taste and season with additional salt and pepper if desired.
