Zucchini Corn & Goat Cheese Side Dish
Zucchini Corn & Goat Cheese is a refreshingly healthy and delicious side dish. This recipe comes together very quickly and is perfect to serve along side dinner.

- 1 tbsp olive oil
- 2 medium zucchini Diced.
- 2 cups fresh corn kernels Frozen can be substituted as well.
- 1/2 tsp dried thyme
- 1/4 cup basil
- 1/3 cup crumbled goat cheese
- salt and pepper to taste
Heat oil in a large skillet over medium heat.
Add diced zucchini. Lightly season with salt and pepper.
Cook zucchini for 5 minutes, stirring occasionally.
Add corn kernels and dried thyme. Cook for an additional 5 minutes. The corn and zucchini will be done when browned softened.
Turn off the heat. Stir in basil and goat cheese.
Taste and season with additional salt and pepper if desired.
