Sheet Pan Mustard Salmon and Green Beans

Sheet Pan Mustard Salmon and Green Beans is perfect for a busy weeknight. In this recipe, salmon is coated in a mustard sauce and cooked along with green beans on the same sheet pan.

First off, salmon is a very healthy dinner as it is high in protein and omega-3 fatty acids. In addition, salmon cooks very quickly which makes it an ideal dinner for a busy weekday.

Sheet Pan Dinners

I am a HUGE fan of sheet pan meals. Sheet pan meals cook everything in the oven, all on one sheet pan and at the same time. This means less preparation and dishes!

This dinner is prepped and cooked in under 30 minutes. I like to make rice while the salmon is in the oven and serve it along side.

How to cook and prep Salmon

When buying salmon, I buy filets with the bones already removed. Salmon is widely sold with the bones already removed so you will not likely have this problem. I also look for filets that are relatively even in thickness so the piece of fish cooks evenly.

You can use skin on or off salmon, this is dependent on your preference. The skin is easily removed after cooking. Typically, I buy my salmon with the skin on and remove it before serving.

I prefer cooking salmon at a high temperature of 425 Fahrenheit. At higher temperatures, the Salmon cooks quickly and yeilds a flaky and tender inside and a lightly browned outside.

Fish can dry out if over cooked, I recommend checking after cooking for 10 minutes. Depending on the size of your fillet, it may take longer. If the fish is not done after 10 minutes, continue checking every 2 minutes. Salmon is done when opaque inside and reaches an internal temperature of 145 degrees Fahrenheit.

In this recipe you will need:

  • Salmon filet
  • Fresh Green beans
  • Whole grain mustard
  • Dijon mustard
  • Maple Syrup
  • Apple Cider Vinegar

Sheet Pan Mustard Salmon and Green Beans

Ingredients
  

  • 1-1.5 lbs salmon
  • 1 lb green beans, washed and trimmed
  • salt and pepper to taste
  • 1 tbsp olive oil

Mustard Sauce

  • 2 tbsp djon mustard
  • 2 tbsp whole grain mustard
  • 1 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • 1/8 tsp cayenne

Instructions
 

  • Preheat oven to 425 degrees Fahrenheit.
  • Line a large baking sheet with parchment paper.
  • Add green beans to the baking sheet. Toss with the oil, salt and pepper.
  • Add the salmon to the baking sheet, arranging the green beans around the salmon.
  • Lightly season salmon with salt and pepper.
  • Whisk all ingredients for the mustard sauce in a small bowl.
  • Reserve half of the mustard sauce for serving. Brush the remaining half of the sauce on top of the salmon.
  • Bake in the oven for 10-15 minutes, until internal temperature of the salmon reaches 145 degrees Fahrenheit.
  • Check the green beans after 10 minutes. If the green beans are cooked before the salmon, remove from pan and continue cooking the salmon.
  • Serve salmon topped with the remaining mustard sauce.
