Creamy Tortellini with Turkey Sausage and Spinach

No chopping is required for this impossibly easy and delicious Creamy Tortellini Soup with Turkey Sausage and Spinach.   To make this recipe, ground turkey is mixed with herbs and spices to make turkey sausage.  Then, our homemade turkey sausage is cooked with broth, crushed tomatoes, tortellini (gluten free if desired), coconut milk and spinach. This comforting soup is ready in under 30 minutes and perfect for a busy weeknight.

Gluten Free 

I have a sensitivity to gluten so I try to avoid it when possible. For this recipe, I used a fresh, gluten free tortellini that I found in the refrigerated section of the grocery store. If you do not have an issue with gluten, regular tortellini can be used.

Homemade Turkey Sausage

Turkey sausage is so easy to make at home and much better than store-bought! By making it yourself you can control the amount of fat and what spices are used in the sausage. 

To make, simply mix ground turkey (93/7 fat) with crushed fennel, red pepper flakes, oregano, thyme, rosemary, basil, paprika, salt and pepper. To crush Fennel, I add it to a mortar and pestle and gently press until mostly broken apart.   And there you have it, homemade sausage!

Ingredients
  

Turkey Sausage

  • 1 lb ground turkey – 93/7
  • ⅛ tsp fennel crushed
  • ⅛ tsp red pepper flakes
  • ¼ tsp dried oregano
  • ¼ tsp dried thyme
  • ¼ tsp dried rosemary
  • ¼ tsp dried Basil
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp pepper

Soup Recipe

  • 1 tbsp oil
  • 1 recipe turkey sausage above.
  • 6 cups low sodium chicken broth
  • 9 oz fresh cheese tortellini GF if desired
  • 15 oz can crushed tomatoes
  • ½ tsp basil
  • ½ tsp thyme
  • ½ tsp oregano
  • 1 cup canned coconut milk
  • 6 oz spinach
  • Salt and pepper

Instructions
 

  • To make the turkey sausage, in a medium bowl mix together the ground turkey and seasonings.
  • In a soup pot, heat oil over medium heat. Add turkey sausage mixture. Break apart the sausage and cook until no longer pink, about 5-7 minutes.
  • Add the chicken broth, crushed tomatoes, basil, thyme, oregano and ½ tsp each salt and pepper. Bring to a boil. Add tortellini and turn the head down to a simmer. Cook the tortellini according to the package instructions. The tortellini I used cooked for 3-4 minutes.
  • 30 seconds before the tortellini is done, add the spinach and coconut milk. Continue cooking until the spinach is wilted and the tortellini is finished cooking. Turn off the heat. Taste for seasoning and add additional salt and pepper if desired.

    Loved this recipe! Only change I made was using fat free half and half instead of coconut milk.

    I followed the recipe exactly (except diced canned tomatoes instead of crushed) & absolutely loved it. I was surprised that the flavor had a little ‘kick’ to it. Very easy to prepare. I’ll be making this again often!
