Crispy Air Fryer Mustard Chicken Thighs are packed full of flavor and ready in under 20 minutes! Chicken thighs are coated in mustard and dipped in panko breadcrumbs and parsley. Then, the breaded thighs are sprayed with olive oil and air fried to crispy perfection. I love serving these crispy mustard chicken thighs on top of a hearty salad.

To make this recipe, you will need just 5 main ingredients:

  • Boneless Skinless Chicken Thighs
  • Dijon Mustard
  • Whole Grain Mustard
  • Panko Breadcrumbs (Gluten Free if desired)
  • Parsley
Crispy Air Fryer Mustard Chicken Thighs

How To Make Crispy Air Fryer Mustard Chicken Thighs

This recipe is super easy to make and can be ready in under 20 minutes!

  1. To start, we want to get our breading station ready. Mix both Dijon and whole grain mustard in a small bowl. In a separate, shallow bowl, mix breadcrumbs and parsley.
  2. Then, lightly season both sides of the chicken thighs with salt and pepper.
  3. Next, brush the mustard mixture onto both sides of the chicken and then dip into the breadcrumb mixture until well coated.
  4. Spray both sides of the breaded chicken thighs with an olive oil spray.
  5. Then, air fry the chicken at 400 degrees Fahrenheit for 10 minutes. The chicken should not be touching in the air fryer, depending on the size of your air fryer you may need to do this in two batches. The chicken should reach an internal temperature of 165 degrees Fahrenheit when done and will be golden brown on both sides and crispy.

Oven Method

If you do not have an air fryer, Crispy Mustard Chicken Thighs can easily be made in the oven. To do this, preheat the oven to 450 degrees Fahrenheit. While the oven is preheating, I place my empty sheet pan in the oven. This will heat the sheet pan to help crisp the bottom of the chicken thighs. Once the oven is preheated, I remove the hot sheet pan and drizzle with oil. Then, I place the breaded chicken thighs on the hot pan, spray the tops with olive oil spray, and cook in the oven for 15 minutes. The chicken should reach an internal temperature of 165 degrees Fahrenheit and golden on both sides.

Ingredients
  

  • 2 tbsp Dijon mustard
  • 1 tbsp whole grain mustard
  • 1 cup panko breadcrumbs Gluten Free if desired.
  • 2 tbsp chopped parsley
  • 6 boneless skinless chicken thighs
  • salt and pepper
  • olive oil spray

Instructions
 

  • In a small bowl combine Dijon and whole grain mustard.
  • In a shallow bowl combine breadcrumbs and parsley.
  • Lightly season both sides of chicken thighs with salt and pepper. Brush both sides with mustard mixture and then dip into bread crumbs.
  • Spray both sides of the breaded chicken thighs with olive oil spray.
  • Place chicken in air fryer making sure the thighs are not touching. Depending on the size of your air fryer you may have to do two batches.
  • Air fry at 400 degrees Fahrenheit for 10 minutes. The chicken should reach an internal temperature of 165 degrees Fahrenheit.
