Ingredients

  • 1 lb chicken breasts
  • 2 eggs
  • Salt and pepper
  • 1 ½ cups almond flour
  • Preferred Wing Sauce
  • Ranch or Blue Cheese Dressing
  • Celery and Carrot

Instructions

  • Cut the chicken into 1 inch cubes.
  • In a shallow bowl, beat the eggs with a pinch of salt and pepper and a teaspoon of water.
  • In a second shallow bowl, whisk together almond flour with a pinch of salt and pepper.
  • Dip each chicken piece in the egg wash and then dredge in the almond flour.
  • Spray an air fryer with non-stick cooking spray. Place the breaded chicken in the air fryer so none of the pieces are touching. Depending on the size of the air fryer you may have to cook the chicken in batches.
  • Spray the top of the chicken pieces in additional non-stick cooking spray.
  • Cook for 7 minutes at 400 degrees Fahrenheit. Flip the chicken breasts and cook for another 3 minutes. The internal temperature of the chicken should reach 165 degrees Fahrenheit.
